Ingredients

  • 2 medium sweet potatoes, scrubbed clean

  • 100g goat’s cheese, crumbled

  • 50g pecan nuts

  • 50g pecan nuts

  • 1 cal Olive oil spray

  • Salt & pepper, to taste

  • Optional: Mixed leaf salad for serving

Directions

  • Air Fry the Sweet Potatoes
    Preheat your air fryer to 190°C (375°F).
    Prick the sweet potatoes a few times with a fork.
    Lightly spray them with olive oil and season with a pinch of salt.
    Place them in the air fryer basket and cook for 20–25 minutes, turning halfway, until fork-tender.
  • Slice & Stuff
    Once cooked, carefully remove the sweet potatoes and slice them down the centre without cutting all the way through.
    Gently open the potatoes and fluff the inside with a fork.
  • Add crumbled goat’s cheese into each potato.
    Sprinkle over the pecan nuts.
    Drizzle 1 tbsp of hot honey over each one.
  • Second Bake
    Return the loaded sweet potatoes to the air fryer and cook for another 5 minutes at 180°C (350°F) until the cheese softens and the pecans are toasted.
  • Finish & Serve
    Drizzle with more hot honey to taste.
    Serve hot with a simple side salad.
