Ingredients

  • 200g Lucky Boat noodles (or any wheat noodles of choice)

  • 2 tablespoons smooth peanut butter

  • 2 tablespoons soy sauce

  • 1 teaspoon sesame oil

  • 1/2 teaspoon chilli flakes (adjust to taste)

  • 1 teaspoon chilli oil (optional for heat and depth)

  • 1/2 cup reserved noodle water (adjust for sauce consistency)

  • Stir-fry vegetables of your choice (e.g., bell peppers, broccoli, carrots, snap peas)

  • Cooked protein of your choice (tofu, chicken, prawns, or tempeh work well)

  • Garnish: sesame seeds, sliced spring onions

Directions

  • Cook the noodles according to package instructions until al dente. Before draining, reserve about ½ cup of the noodle water.
  • In a bowl, whisk together the peanut butter, soy sauce, sesame oil, chilli flakes, and chilli oil. Slowly add the hot noodle water a bit at a time and keep whisking until you have a silky, creamy sauce. You can adjust the thickness by adding more or less water depending on your preference.
  • Stir-fry your vegetables in a hot pan or wok for a few minutes until they are just tender but still crisp. Add your protein of choice and heat through.
  • Add the cooked noodles to the pan and pour the creamy peanut sauce over everything. Toss well to combine until everything is evenly coated and warmed through.
  • Serve hot, topped with a sprinkling of sesame seeds and chopped spring onions. For extra crunch or spice, drizzle with additional chilli oil or crushed peanuts.
