Ingredients

  • 2 cups / 500g Greek yogurt (strained): The base of our dip, providing a creamy texture and rich flavour.

  • 1 cucumber (grated and drained): Adds a refreshing crunch and balances the yogurt’s creaminess.

  • 2 cloves garlic (minced): Infuses the dip with a robust, savoury flavour.

  • 2 tablespoons / 30ml olive oil: Adds smoothness and healthy fats.

  • 1 tablespoon / 15ml fresh dill or mint (chopped): Enhances the freshness and adds a touch of herby flavour.

  • 1 tablespoon / 15ml lemon juice: Adds a zesty tang and balances the flavours.

  • Salt and pepper to taste: Essential for seasoning.

Directions

  • Prepare the Cucumber: Peel and grate the cucumber. Place the grated cucumber in a fine mesh strainer or cheesecloth and squeeze out as much water as possible. This step is crucial to prevent the tzatziki from becoming watery.
  • Mix the Ingredients: In a large bowl, combine the strained yogurt, grated cucumber, minced garlic, olive oil, chopped dill or mint, and lemon juice. Mix well until all ingredients are thoroughly combined.
  • Season: Add salt and pepper to taste. Adjust the lemon juice and garlic according to your preference for tanginess and garlicky flavour.
  • Chill: Cover the bowl and refrigerate the tzatziki for at least an hour. This allows the flavours to meld together and enhances the dip’s taste.
  • Serve: Serve chilled as a dip with pita bread, fresh vegetables, or as a sauce for grilled meats. Tzatziki also pairs wonderfully with Mediterranean dishes like falafel, gyros, or kebabs.
