  • ¼ cup (60g) mayonnaise – Binds everything together and adds creaminess.

  • 1 teaspoon sugar – Enhances the natural sweetness of the corn.

  • 1 cup (100g) shredded mozzarella cheese – Melts beautifully and creates that gooey, stretchy texture.

  • Salt and pepper to taste – Balances all the flavors.

  • Chopped parsley or spring onions (optional) – For garnish and a fresh finish.

Directions

  • Preheat the oven to 200°C (400°F) or preheat a cast iron skillet over medium heat.
  • In a large bowl, mix together the corn, chopped red onion, diced bell pepper, mayonnaise, sugar, and a pinch of salt and pepper until well combined.
  • Transfer the mixture to a cast iron skillet or small oven-proof dish. Spread evenly.
  • Top with shredded mozzarella cheese, making sure it covers the entire surface.
  • Bake for 10-12 minutes or until the cheese is melted and bubbly. Optionally, switch to grill/broil mode for the last 2 minutes to get a golden, crispy top.
