- For The Rice
1 cup (200g) basmati or long-grain rice
1 cup (240ml) chicken/vegetable broth
1 tablespoon olive oil
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon turmeric
1/2 cup (120ml) canned diced tomatoes
Pinch of Salt
- For the Spiced Chicken (or Quorn) Mix:
2 chicken breasts (or 250g Quorn pieces for a vegetarian option), diced
1/2 tin black beans, drained and rinsed
1 tablespoon olive oil
1 tablespoon tomato paste
1 teaspoon ground cumin
1/2 teaspoon dried chili flakes (adjust to taste)
3 cloves garlic, minced
1/2 teaspoon garlic powder
1 tbsp BBQ sauce
1 teaspoon honey
Salt and pepper, to taste

Lime wedges, for garnish
Fresh cilantro, chopped, for garnish
Shredded cheese Choice is yours but a nice sharp cheddar works best for this
Directions
- Prepare the Mexican Turmeric Rice:
In a saucepan, heat the olive oil over medium heat. Add the ground cumin, paprika, and turmeric, stirring for about 30 seconds until fragrant.
Add the diced tomatoes and cook for 2-3 minutes until they start to break down. Stir in the rice, coating each grain with the spices and tomatoes.
Add water or broth and a pinch of salt. Bring to a boil, then reduce the heat, cover, and simmer for 15-20 minutes, or until the rice is cooked and fluffy. Set aside. - Prepare the Spiced Chicken (or Quorn) Mix:
In a large skillet, heat the olive oil over medium heat. Add the diced chicken or Quorn pieces, the black beans and cook through about 5-7 minutes.
Add the minced garlic and cook until fragrant, about 1 minute.
Stir in the tomato paste, ground cumin, dried chili flakes, garlic powder, BBQ sauce, and honey. Toss to coat the chicken or Quorn evenly. Cook for another 3-4 minutes, ensuring everything is well mixed and cooked through. Season with salt and pepper to taste. - Assemble the Burrito Bowl:
